Dr Lindsey’s Vegan Caesar Dressing

Yield: makes enough for 2-3 family size salads

Ingredients:

  • ½ cup olive oil (add more depending on consistency desired)
  • ½ cup tahini
  • 3 tbsp capers
  • Juice of 3 lemons
  • 3 cloves raw garlic
  • Salt and pepper to taste

 

Instructions:

  1. Add all ingredients to food processor and season to taste. If desired, roast garlic before using for a sweeter-tasting dressing.
  2. Blend ingredients until desired consistency is achieved, adding more olive oil if needed.
  3. Serve immediately, or store in an airtight container in the fridge for up to three weeks.
