Yield: makes enough for 2-3 family size salads
- ½ cup olive oil (add more depending on consistency desired)
- ½ cup tahini
- 3 tbsp capers
- Juice of 3 lemons
- 3 cloves raw garlic
- Salt and pepper to taste
- Add all ingredients to food processor and season to taste. If desired, roast garlic before using for a sweeter-tasting dressing.
- Blend ingredients until desired consistency is achieved, adding more olive oil if needed.
- Serve immediately, or store in an airtight container in the fridge for up to three weeks.
